Both are quiet similar in describing something. But ”exceeding“ is commonly used to describe something that’s continuing to increase at the current time. Whereas, ”extremely“ usually describes something that’s at a high level and eventually stops. For example, ”the flood levels are exceedingly high“ could show that they are high and still increasing but ”the flood levels are extremely high“ could show that they are at a high level but are no longer increasing.
