Q: ¿Esto suena natural? Recently, omakase has been a great boom in South Korea.

Especially among the younger generation, this dining has become a popular trend.

Literally translated “I will leave it up to you,” it is a form of Japanese dining service in which the chef selects the course of the day for the visitors.

In Japan, the term is usually used in sushi restaurants.

This service emerged in the 1990s in the wake of the Japanese economic bubble.

Due to the sudden affluence, a lot of new customers went to the sushi restaurants.

However, they lacked adequate knowledge about sushi, and this made it difficult for them to choose their dishes.

Therefore, new customers just left it to the chef, requesting him to plan any type of dish for them.

Customers were often left embarrassed as they had no knowledge of particular fish varieties, which made it tougher to order.

This was where omakase was born.

Getting chef-recommended dishes made customers more confident and also helped the chefs avoid food wastage.

However, in South Korea, the term “omakase” refers to a fine-dining restaurant, which provides course dishes using high-quality ingredients.

While the term omakase is used for sushi and yakitori in Japan, it is more varied in Korea, such as Hanwoo (Korean beef, in English), Jokbal (Pigs’ feet, in English), or coffee.

The pricing of omakase, mostly sushi, is about 100,000 Korean won.

Some of the younger generation is now enjoying a luxurious culture, and they usually make an appointment to mark special days, such as birthdays, Christmas, the first date, and so on.

According to the chef who runs the omakase restaurant in Gangnam, Seoul, young people in their 20s and 30s are their main customers.

Why has omakase consumption increased among young people?

The Main Reasons for the Increase in Omakase Consumption

Specialists in the food industry analyzed the reasons for the popularity of omakase.

The first reason can be attributed to COVID-19.

People began meeting in small groups rather than forming a large group, and the demand for a quiet place where a limited number of people could spend a leisurely time increased.

Accordingly, omakase, the luxury and private fine-dining restaurant, was considered a perfect alternative to spend an enjoyable time.

Furthermore, as going on foreign trips seemed impossible, people were inclined to consume high-end food rather than travel.

The second reason is the advancement of social media, especially Instagram, where people started flaunting through their feeds.

As the younger generation tends to upload the best moments of their daily life on Instagram, social media has become a medium to brandish their blissful, luxurious life to others.

In this context, omakase is a great way for them to ostentate, as it allows them to brag about their personal tastes and wealth by posting pictures of high-end restaurants.

The last reason is that the younger generation nowadays gives great importance to their personal tastes.

They believe that personal taste comes from experience, and thus if they do not have any chance to experience, it is impossible for them to expand their preferences on what they like, how they think, or the values they have.

By visiting those restaurants and receiving the best customer service, they may receive some lessons and expand their perspectives.

Difference of Views about Omakase Culture

The A-Ilbo interviewed two students who had contrasting views about the younger generation consuming omakase. The followings are their views about the omakase culture.

Student A

“When I click Instagram and look at what others do, I see a lot of posts on fine-dining, especially omakase.

I personally believe that people started to consume omakase after social media advanced.

The influence of social media drove the younger generation to flaunt themselves and imitate others.

I do not believe that this type of consumption culture is healthy.

In general, individuals in their 20s and 30s do not have enough money to make their own living.

It is dangerous for them to “flex,” which makes it difficult for them to save money by only focusing on the present.

To be honest, I feel a sense of relative deprivation.

Am I the only one who saves money and lives tenaciously?

Sometimes, I even feel I am not ordinary because everyone, except me, enjoys their daily lives and eats omakase on every occasion.”

Student B

"There is nothing wrong with eating omakase.

Consuming high-quality foods such as omakase is for experience.

I consider experience as the most important aspect of my life.

The more we know, the more we get to see. Food is one such example.

I gain additional knowledge and experience by consuming new, luxury food.

Moreover, it is a sort of self-satisfaction. Earning money and using it for what I like makes me happy. I do not think this is a problem that deserves any criticism.”

Considering the traits of younger generations, it has been questioned whether this type of luxurious consumption should be continued.

Omakase is just an example of a luxurious consumption that the younger generations indulge in, and there are so many other ways of spending that those in their 20s and 30s enjoy.

Attention is now focused on whether luxurious consumption is desirable, and what will be the standard of desirable consumption.
