Here's how I would say those:
"Can you change this 10 dollar bill to two fives please?"
"Can you change this 10 dollar bill to ten ones please?"
The first one sounds natural, but for the second one I wouldn't add the 'dollar bills' part. Since it's already been said that what you want to exchange are bills, you don't need to say bill again. Hope this helps.

The pronunciation and everything is good, though I don't think "Can you please break this 10 dollar bill for me" is something people would understand. What people more commonly say is "Can you exchange/change this 10 dollar bill for some [ 5 dollar bills, 2 dollar bills, whatever you want to change you 10 dollar bill to ]s please?"
Example: Can you change this 10 dollar bill to two 5 dollar bills please?
(Keep in mind 'break' isn't commonly used in American English, I'm not sure about other countries though.)
