'gonna' is slang for 'going to'. Use 'will' when the plans are definite.

Gonna - Slang off of 'going to'.
Going to - Something someone plans to do.
Will - Something that is going to be done. More finalized sounding than 'going to'.
Most of the time, will and going to are interchanged. So there's usually no difference =)
