literal meanings are basically the same. the common usage differs. If I was asking your opinion about her in a overall sense. appearance, personality , character and so. I would use. "What do you think of her." If I was asking about my new girlfriend for example. If we were talking about a new employees job performance. "What do you think about her." would be more common.
