¿Cómo dices esto en Inglés (UK)? I've written an essay. It exceeds the word limit and I have to reduce the number of words. Can I say 'I cut more than 1,000 words to meet the word limit'?

Yes, you can say that. Sounds a little informal though.

I would suggest saying something like: "I surpassed the maximum number of words, so I had to cut out some." Your phrase, for me, means that you had to erase more than 1000 words (I suppose that was not what you meant!)

I don't think that there's anything wrong with the word cut in that example, but you could also say "I reduced my essay by 1000 words" if you're worried about it sounding informal

If speaking to a friend: I cut a 1,000 words to meet the limit. Remember english is like Japanese the less formal the less words.

That's not true, especially with verbs. In fact, a formal verb is almost always one-worded, as opposed to its "phrasal-verb equivalent". Many examples:
Go up / rise, go down / decrease, get better / improve, make difficult / hinder...
I suppose what you meant is that informally one tends to eliminate words, which is true, but the doubt here was nothing about it :)

I would say "I was over the word limit for my essay so I had to cut it (by 1000 words)." It's not too informal. Not rude. Natural.
