you might be thinking about it too hard.
they are both just poetic ways to say your affection to someone.
the "difference" is maybe your mom loves hearing 1 and your best friend loves hearing 2
if I had to try and pick out a difference. I would say I like "Everytime I remember you" more just because it sounds like you might be thinking of me more often.
