Example 1: I am going to hit my target of 5 sales today!
Example 2: I am going to hit my goal of 5 sales today!
You can use either however, it sounds more natural to say 'im going to hit my goal'. You should use the word target when you are talking about an actual object.
Example: I am going to shoot that target down there!
