First of all note that their stress/pronunciation is quite different:

HERstellen
erSTELlen

herstellen is mostly used with industrial/professional production of goods.
It can also mean "to (not) return to a former state" as well as "to accomplish something due to some kind of effort"

Diese Fabrik stellt Autos/Klimaanlagen/Kühlschränke/.... her

Ruhe und Ordnung wurden wieder hergestellt
(Order and peace/quiet were reestablished)

Durch das Genmaterial konnte eine Verbindung zum Tatverdächtigen hergestellt werden.
(Because of the DNA material it was possible to establish a connection to the suspect)


erstellen: In my opinion more of a "technical" or "bureaucratic" term to be honest. It is only used in specific situations, mostly including some sort of written form. Typical nouns you would use "erstellen" with are

Listen, Gutachten, Konzepte, Anträge, Modelle, Profile (you would call the process of registering to hinative "ein Provil bei Hinative erstellen" vor example)

Duden also lists "errichten/bauen" as synonym, but I honestly never heard it being used that way. Maybe it's also an occupational term, I don't know.

,,erstellen" means something like to create a document in word. ,,herstellen" is used when you produce something like furniture etc.

erstellen:
,,Ich erstelle ein Word Dokument"(I create a word document)
,,Ich erstelle eine neue Playlist"(I create a new playlist)
,,Er erstellt ein Gutachten"(he creates a report)

herstellen:
,,Die Firma wird bald Möbel herstellen."(the company is going to produce furniture)
