I just did a hebrew lesson, and I’m confused by the word rice. I know it’s pronounced like Orez (almost exactly the same in Spanish), but the characters don’t make sense. אורז Why is there an Alef in front of the vav (O)? Also, how is it the vav becomes the letter O? My hebrew tutor is not really explaining things clearly to me. Thank you!

Welcome to the hellscape that is Hebrew orthography. The letter א used to represent a glottal stop in Biblical Hebrew, but this sound doesn’t really exist in Hebrew anymore, so it can basically represent any vowel (a,e,i,o,u).
The letter ו is used to represented the consonants “v” or “w” (typically doubled when it’s a w), and the vowels o and u. If the word is written with niqqud, o is represented by וֹ or וֺ, and u by וּ.

It depends on the nikkud (אוֹרֶז ).
The א has a nikkud of kholam ma-le which is read like O
For example: בָּלוֹן = balloon, the ל has nikkud of kholam ma-le too and it is read like this "balon".
We usually don't write the nikkud, but when there are words a nikkud ma-le (ניקוד מלא) it also written with the nikkud.
