¿Qué significa "at once" ?

This is another question from the Jeopardy TV quiz.
Category: A LOVELY PORT
Q: Fine port that can be drunk at once may be marked L.B.V., "Late Bottled" this 
A: Vintage

I think I understand the overall meaning of the question and the answer. I've also learned L,B,V is the 2nd good qualify port wine after "Vintage."

But I don't understand what "at once" means here. Does this mean "on the spot" or "as soon as you open it?" Or I may be able to understand if "the port can't be drunk at once." Does this mean the port is so poor that you can't drink it "at once"?
