because "maçã" is considered a feminine word, so you say the feminine for one "Uma"
so: uma maçã
one apple/ a apple
masculine words like "Carro (Car)" for example you use the masculine for one "um"
so: um carro
one car/ a car
you need to use the correct word depending on the word gender or what you say may make no sense at all.
um carro (one/a for ♂️)
uma maçã (one/a for ♀️)
dois carros (two for ♂️)
duas maçãs (two for ♀️)
only one and two has gender variations
esse carro (this for ♂️)
essa maçã (this for ♀️)
aquele carro (that for ♂️)
aquela maçã (that for ♀️)
and a lot more word gender variations
remember that using wrong gender variations can make sentences sound like gibberish so it is better to get used to them

You can't use "Um maçã" because "um" is masculine article and "maçã" is a feminine substantive so it always goes with "uma" that is a feminine one.
