It is a rather mean joke. Vegetable can mean someone who had a terrible injury or sickness. Sometimes they stay in a wheelchair. Therefore "vegetable" has two meanings.

Keep in mind vegetable is a very rude way to describe someone who is sick.
Don't use that term normally to refer to other people, or they will think you're being mean and hurtful.
