yes, you must use the pronoun when using a verb because it is more specific and also does not confuse the person with whom you are talking.
for example:
A-"Você gosta de biscoito?"
B-"Não, eu não gosto".

Usually if you're saying a sentence alone, like "I like something" you must use the pronoun
Eu gosto de maçã
Ele é uma boa pessoa
Eles me ameaçaram
Ela é muito bonita
If the subject is known by the people who are talking, it's ok to leave the subject out. You don't need to keep repeating the "she, he, they" as in English
"O que você acha do Gabriel?
(Ele) É uma boa pessoa"
(You say the "ele" If you want to in this case)
Did you notice how I only said one "ela"? It's no necessary to keep repeating it).
Here too, I only used one "he", but the "o" after "depois de" has the function that the "ele" would have if had written "...Mas depois de conhecer ele melhor", but it would be grammatically odd and wrong to repeat the "ele" because unlike in the English, we canot keep repeating "ele... ele... então ele... aí ele...", that is seem as a "Vício de Linguagem" and must be corrected.
(Sorry, I don't know how to translate "Vício de Linguagem" to English, but it's used to refer to things that you must avoid when writing)

@_Kvothe_ wow thanks so much, your explanation was very helpful! Also sure that would be great to talk and help each other. My whatsapp number is in my profile description
