Just depends on what you want to use because all have the same meaning!
Ex.
1. A: Ya me voy! B: OK, Adiós!
2.A: Hasta luego B: Chao!
3. B: Que te vaya bien B: Chau!
BUT 2 and 3 are not much common. That’s the only difference, but I recommend you to use Adios 😎

All three mean the same, it depends on the region or country more than using them for different things. In Mexico we don't usually say "Chao/u".
But, for i have understood that "chao/u" is more for friends and family, since "Adiós" is the most formal way to say bye.

También puedes decir para despedirte;
—Que tenga buen día/tarde o noche (Have a good day, afternoon, night,)
(Formal y amistoso)
—Que le vaya bien
(Hope everything goes well or something kind of)
(Informal y amistoso)
—Cuidese mucho
(Be careful)
(Despedida informal)

No one said it but I'm pretty sure "chao" is a wrong way of saying "chau". Like saying cya instead of see you. So make sure that you don't use it in a formal setting, specially writing, since speaking they sound kinda the same.
