Wow! From 1 to 3, the sentiment seems to intensify, but they are all similar. If someone were talking to me, I'd hope for #3.
Grammar's fine in all 3.

Depends on the feeling you want to give.
1) gives the feeling you're just waiting. Could be addressed to a friend.
2) give the feeling of impatience, eagerness. Could be addressed to a family member.
3) gives the feeling of a lover longing for their significant other.

1) "Im looking forward to being with you" is more formal/romantic
2) "I can't wait to be with you" is romantic but casual
3) "I long to be with you" is very romantic (mostly in literature or movies)
Personally, I would go with option 1 or 2 depending if you are trying to be formal or informal. (Unless the intention is super romantic.)
Also, if you don't want to be romantic I would go with "Can't wait to see you" or "See you soon"
