Is " catch the deadline" correct? If not, how would I say when I wanna express "meeting the deadline in the last minute?

I would use 'meet'.
"Jane promised us she could meet the deadline."
"That's no problem. I can complete the work and meet that deadline."

@DSB_ But what if I wanna say meet the ddl particularly in the eleventh hour? Can "meet" also mean that, plz?

@DoloresLi If you want to stress that the deadline will be 'close' or 'tight' you can modify the verb 'meet' with an adverb such as 'barely' or with an idiom such as "by the skin of one's teeth".
"I barely met the deadline, I submitted my report with 2 minutes to go!"
"Sarah met the deadline by the skin of her teeth."
"We can meet the deadline, but it's going to be tight!"
