All he seemed to do was sit. Aquí me surge la duda de ¿porqué se coloca "sit" o sea el tiempo presente y no "sat" como yo lo hubiese puesto para significar "sentarse".?

Because there is an implied "to" before sit...it is technically an infinitive, so there is no conjunction of tense. The "to" is just dropped.
All he seemed to do was to sit.
