Ok, so the use of the past perfect tense (I had been) technically the past perfect continuous is kind of tough for English learners, but I’ll try to explain.
-Continuous/Progressive = I am cooking
-Past continuous/progressive = I was cooking
-Past perfect continuous = I had been cooking
One of the uses of the past perfect is with interrupting clauses. For example:
-What were you doing last night?
-Last night I was playing tennis with a friend.
-Last night I had been been playing tennis when all of a sudden I heard an ambulance approaching. (Interrupting clause in the past simple)
It’s really hard to explain, but just just be aware that a lot of native speakers incorrectly use the past simple when it should be the past perfect (in casual/colloquial spoken English)

The past perfect as I like to say is the past within the past. Another example might be:
-I had been talking to him for nearly twenty minutes before he let me leave.
It’s used with the word “before” + interrupting clause in the past tense a lot
-I had worked for 5 hours before anyone came to relieve me.
-I had told him not to worry.
-He had never really liked me much.
