"Sunday it is" sounds more old-fashioned, and no one really says it that way.
Most people will say "It it Sunday" and even more will say "It's Sunday". (A contraction of It and Is becomes It's)

@minmin119 "Sunday it was" sounds a bit like British grammar. Quaint and probably why Americans don't use it as far as I know.
So yeah sounds like you're getting it
