Consider this sentence:
"Gosto desta mesa". - "I like this table"
Now consider this question:
"Qual mesa gosta?" - "Which table do you like?"
We are asking for one from a selection.
You can answer the question fully and say:
"Gosto desta mesa."
But that is a little redundant, instead you can say:
"Gosto deste." - in this context in English you would say "I like this one." because you are specifying one from a selection.
