実は a mí を抜いても意味が変わらないですが、a mí が表記される状態で「私」に強調が含まれています。他の人が好きかもしれないですが、「私が」好きじゃないですって感じがします。

Really is nos very necessary you can say "debes saber que no me gustan los huevos sin yema" because you are talking about you
You can say it too like you are saying "Debes saber que a mí no me gustan los huevos sin yema" is almost the same
