Are both of these phrases acceptable to use…
“Bien hecho!” “Buen hecho!”
I was corrected by a native Spanish speaker when I said “Buen hecho.” She said to say “Bien hecho”, but I hear Spanish speakers use “buen trabajo”, is there a difference?

"buen hecho" suena raro, mientas que "buen trabajo" suena correcto.
"bien" es adverbio. entonces se usa con verbos como en "bien hecho"
"buen" es adjetivo, entonces se usa con sustantivos como en "buen trabajo"

Grammatically speaking, both are possible. The difference is that, as pointed out by @AzaelLp, bien is an adverb and buen is an adjective. Now, hecho is the past participle of the verb hacer, and can be used as either an adjective or as a noun.
In the common case of praising what someone did, you're employing it as an adjective, hence why it has to be preceded by an adverb. (Bien hecho.= Well done.)
Now, if you were to say "Buen hecho", you'd be employing hecho as a noun (since it is modified by an adjective). In this case, the meaning would be "Good fact" (That's a good fact. = Ese es un buen hecho.). However, in Spanish, saying "(Ese) es un buen hecho." is quite uncommon, and most would say "Esa es una buena observación." for most cases.

@bochuck Maybe?, there is a difference, "buen trabajo" is to congratulate for some work you did and it was good, "bien hecho" is still the same, but more Informal

It's like "well done" and "good job". You wouldn't say "good done", would you? (in this context)
