I could be wrong, but I hear Mexicans adding an extra "s" on the end of past tense, tú form verbs (-aste, -iste). Am I just hearing things??

You are not wrong, partially, I mean that is true but It is not a general norm. I want to be respectful of what I will say next, people who add an extra "s" are people who did not have access to an average level of education, the bad habit of adding "s" comes from humble regions where there was no access to education. From my experience I can say that you will not notice this bad habit in any university, for example. Adding "s" is wrong, of course.
