¿Cómo dices esto en Inglés (US)? 「煮物（にもの）]

I think I would just say "boiled". I mean, it's not exactly the same, but だいたい。
ゆで卵 = boiled egg (though it's not 煮物).
Maybe "stewed" is better...
Like おでん is pretty much "stewed" stuff ですね。

We often use the word "煮物”, for example "今日（のメニュー）は煮物にしようかな”
So we simply say "I'm gonna cook boiled for dinner today", right?

"boiled" is an adjective, so you'll need something after "boiled". Also, unlike in Japanese, we don't usually generalize with 「煮物」。 (Probably because 煮物 is not as common in western cooking). So, we'll use it more specifically. i.e. "Tonight, I'm making boiled / stewed frog legs".

Also, we can say simply, "Tonight, I'll be making stew for dinner", though this is different from 「煮物」, as it's a specific dish. (大体英語の "stew" = ビーフシチュー)
