¿Qué significa cuántos ?

"He perdido cuántos batallas últimamente, pero se acabó."

¿En esto, que significa "cuántos"? ¿Significa "all" o "some" o otra cosa?

That phrase is incorrect. First of all, cuántos or cuántos is for questions only, and would mean "how many?". Secondly, the ending -os is masculine and batallas is a feminine word, so the ending must match.
Regardless the above observations, my guess is that they were trying to say "He perdido unas cuantas batallas..." which could be seen as saying some battles, or ratter, quite some battles. But if the original speaker said it the way you presented, I may still have some reservations, because it could be an indirect question, or even a direct question (consider lack of punctuation, but "He perdido, ¿Cuántas batallas?, pero se acabó." = I've lost, how many battles?, but it is over"), depending on context.

@Nomadires thank you so much for your correction and insightful notes! After I went back and reviewed the video I copied it from, I realized I had transcribed it incorrectly. Like you had guessed, it was actually "He perdido unas cuántas batallas últimamente"!
