“Mis padres eran Méxicanos.” Does this mean they are not alive right now? Or that they changed citizenship? Or can be used in either situation?
“Mi madre era enfermera.” Can I use that to mean that she is not a nurse anymore? Or should I use “Mi madre fue enfermera” to say she has a different career now?

First, "Mexicanos" has no accent on top of the "e".
Yes, it can mean both. Without more context, they might have passed away, or they are no longer Mexican citizens. Although this 2nd use is much less common.
For the 2nd question, it sounds more natural using "fue". Using "era" could indicate that she was a nurse until she died. Again, it depends on the context, but "fue" is more common overall.

“Mis padres fueron mexicanos, ya fallecieron."

"Mis padres eran Mexicanos". puede usarse para ambas, para referirte a que ya murieron o que cambiaron de nacionalidad o así.
"Mi madre fue o era enfermera" puedes usarlo para los dos contextos que mencionaste.

It means that they passed away ( cause you dont lose your citizenship for havimg another) in the second one Is the same thing i wouldnt use this sentence in any case It would be ( mi madre ya no trabaja como enfermera) this can be used for two reasons she passed away or she has a new job)

@Grace90509 you can say “Mis papás ANTES eran” Which can trigger the question “Y después…?” It could sound a little redundant but I think that it indicates that there is an after and before of that fact.
