correct would be: "Wir finden diesen oder jenen, der ihn ersetzt" (der instead of den)
It's not very common though, most people would say "jemanden" instead

Yes, that sentence is correct
"dieses und jenes", I actually thought about writing that in my answer, but I didn't. Basically, this expression is the only time people actually use the word "jenes" in daily speech, when they say "this and that", "dieses und jenes".
"dieses und jenes" is an expression on it's own though, it's not really a pattern that is generally applicable, only in that form, like in the sentence you wrote here
