"lui" is an indirect pronoun like "him" in english (in your sentence: his ears allow him to…)
"lui" is the indirect pronoun equivalent to "il" and "elle" both.

@shogune I don't think that's possible with proper grammar. You could say "Ses longues oreilles permettent au (à+le) fennec (…)"

I guess the original sentence can be understood as "Les oreilles du fennec permettent (à lui) d'entendre" but remember that it's incorrect to write it like that. Because "lui" is an indirect pronoun, the "à" is not necessary, it's already included in the meaning of "lui" in a way.
