Not really a difference in meaning, but "anyways" is always colloquial (and possibly more common in some regions than others). "Anyway" is the correct dictionary form, and it can be informal, formal and anything in between.
"Anyways" can have a friendly, folksy feeling to it. Or it can sound like "lazy" English, the way teenagers speak slightly incorrectly. It depends on how the listener judges it. I personally like it, but it might sound sloppy at a job interview.

anyway is the only one I ever use. I'm not positive, but I think anyways is technically incorrect to use at the start of a sentence

Like @autre said, "Anyways" is colloquial.
"Anyways" is usually said as a single word.
You can't say "Do that anyways you like".
But you can say "Anyways... Let's go see a movie"
