You can genuinely tell them how you're doing by answering and giving them a bit of an explanation to keep the conversation going.
For example, when someone asks you that, you can say: I'm doing great, just a bit tired from today because of work. Other than that, my day is going well, what about you?

Usually we reply with good or great but if you would like to be respectful you would return the question. When they ask "how are you" you can say "good, how are you" to express you care about how they feel

So, instead of just replying with a "good" or "great", you can give them the reason on why you're in a good mood. :)

You can say "pretty good", "excellent". One that might get you a look if you're feeling like being adventurous is "swimmingly"

Wonderful, and you? If you end with "and you ?" It conveys interest and creates more conversation. Makes the speaker happy you are concerned.
