In "Вредно есть много солёного." , is something omitted? I think there's no word equivalent to "dish" or "food" though it can be tranlated as "It's bad for your health to eat food that contains much solt".

In this case "солёное" is considered to be a noun that means "salty food". It happens a lot in Russian - we use adjectives as nouns.

"Вредно есть много солёного " is correct. In this case "солёный" is a noun, not adjective. There are some words in Russian that can be nouns and adjectives at the same time, depending on the context, for example:
"Это рабочий инструмент"- рабочий means that this tool works and it's a description of that tool, so it's an adjective.
"Рабочий устал" - рабочий is a person who works, so in this case рабочий is a noun
