capital letters are archaic possesive form. "Of the evening" > "Van de avond"
"I eat of the evening." Literal translation makes no sense, but it's like that, I think.

It's a remnant of the past. 's is short for des, which is an elative case. Des avonds, des morgens, des middags, des nachts. Des avonds means something like tonight/this evening/in the evening. Des is never used animore, but it''s remnant 's still is. the word following it should also end with an s. If you want to see elative cases still in action, you should look at German.

yes, it''s a fixed phrase. If you want to write it at the start of the sentence, something weird happens with the capital. 's Avonds wordt het weer eerder donker. The abbreviated word doesn't get a capital, but the next word gets it. Same goes for other abbreviations. 't Meisje is moe.
