If it's great service, you should tip 15-20% like at other restaurants.
I've never tipped $1 per person, but some people do that. This is okay for cheaper restaurants

I always tip 15-18% at buffets - the people are still doing full service work (clearing away used dishes, getting you drinks) and their base pay is the same as regular servers, so they should get tips. Remember, in the US restaurant owners pay the servers almost nothing because they are expected to take most of their income in tips.
Basically I tip like this:
Fast food - no tip
No table service / coffee shop - no tip or $1 in the jar if they are nice
Table service - 15-20%
Bar - $1/drink
Taxi - 10%
Haircut - 15-20%
