You should use a comma. That is actually the grammatically correct way to write.
"Hi, you guys" sounds very friendly and informal. You will hear this among friends.
"Hi, folks" sounds a little old to me. You won't hear young people call each other "folks." Not even old people.

Well, you don't actually pause when you say it in conversation, but in writing, it is correct to use comma in greetings. For example:
"Hi, Mary," John says.
@tipsy_chris: I think "folks" is often used with a large group of people. An example is a tour group.

Folks is used in the southern states of America or old people.
"You folks don't know a thing" meaning "you people don't understand anything."

"Hi guys!" / "Hi you guys!" is more casual than "Hi folks!" I usually use "Hi folks" in written emails at work because it sounds better than "guys", and saying "Hi guys" to multiple people, who include females, seems funny to me. I almost never use "Folks" in verbal communication. "Folks" is more commonly heard in verbal communication in the South from what I can tell, similar to "Ya'll".
