It’s very difficult to explain but I will try my best.
“I thought of you” is usually more specific where you literally think of “you” (the person you are thinking of)
For example if your friend likes a certain song and you heard it, you could say to your friend “ I heard the song you like and thought of you”
“I thought about you” this is more in depth. You didn’t just have a brief thought about the person but actually thinking more in depth about them.
For example if someone loves someone and misses them they could say to that person “ I was thinking about you” this meaning thinking more in depth of how the are, past memories, etc.
To summarise.
“I thought of you” is usually a brief thought of a person
“I thought about you” is a indepth thought about that person.
