I probably wouldn't say "I'm so hectic". I'd say "what a hectic day", I'll use it as an adjective to describe something, rather than describing myself....

Native English speakers don't typically describe people as "hectic." Situations are hectic, some workplaces are hectic. But people who are busy are either busy or (even worse) "frantic" or "frenzied" or "crazed."

If you want to make sure that you don't make a person sound crazy, just really busy, you might say that I am "crazy busy." Or that "work is hectic/crazy/harried/frenetic. . . ."
