I was told that "Do you want coffee"and"Would you like coffee",these two phrases without the word "some" before coffee are too rude.

I feel like adding "some" just makes the conversation more casual and informal. There's not any different in the meaning though.

"Would you like some coffee?" is more polite, and adding "some" doesn't really change the meaning and isn't rude.
