It works like a placeholder in the sentence. “Such and such” refers to nothing specific. In the sentence “they were doing such and such in the park when I saw them,” the speaker might not know what they were doing. In summary, the phrase is used to vaguely refer to something that they know doesn’t need to be specified. I can’t think of an equivalent in Spanish.
