Is this correct?

Or Do I have say like this??

In my considered opinions,there is a grammar mistake in your sentences.
I think you want to say,'do I have to say like this.'
In your question,I think the both are correct.but I suggest that you can change the 'goes' to a common one.just use 'say' is ok.

If he is talking about himself then the second one is proper. When writing we use quotation marks to indicate what is spoken.
Also, people would understand using the verb "goes", but a more proper way would be:
He said "I ate an apple this morning."

In speaking conversation, should I say the second version?
I heard “He goes he did something.” Or “She goes she did something.” a lot in speaking conversation.

The only situation I can think of that people use "goes" is it you are telling people about a conversation or a story that has happened.
for example:
So I was at a restaurant and the waiter sneezes in my salad and then goes "I wouldn't eat that if I were you."
This is common in casual conversation but I can't think of other times I would use it.

@saku_999 I don't think so. I don't know how or why English speakers started using the verb "go" this way, but it might be because it is a very commonly used verb, but that is just a guess
