Usually "set in" only refers to the location in a movie, book, etc.
"I noticed that the Saturday meeting will be in Shanghai" is fine. Like this, the sentence feels like you are emphasizing "Saturday", maybe to compare it to the "Sunday meeting" which will be in Beijing.
"I noticed that the meeting, Saturday, will be in Shanghai". If you change it like this, Saturday is just an extra fact about the meeting, but not emphasized.
